VOLUNTEER GUEST POST: SWEET TREATS FOR HUMANS (RECIPE)

We had a big reason to celebrate here at Cat Town this month. Construction just wrapped on our new adoption space that houses special-needs cats and kittens (more on that soon!). This is a thoughtfully designed sanctuary space for both cats and the volunteers like me who work with shy, sick and senior cats until they are ready to find their homes. 

We were all eager to show it off to our major donors who helped make it possible. This new space, right next door to our original adoption center and RAWR Coffee Bar, allows Cat Town to rescue even more at-risk shelter cats. 

That brings me to the sweet treats. When Cat Town hosts events for our dedicated backers, it’s amazing to see the community come together and offer support. This time, we were lucky to be treated to a special dessert by a local chef. 

Chef Nora Dunning of Drip Line in West Oakland prepared chia pudding parfaits with plum compote and sliced almonds, and served them in individual Weck jars. We asked her for her recipe and wanted to pass it along. They were a hit! And they're vegan!


Chia Pudding

Serves 6
Notes: Get out your scale and your favorite small jelly jars

Ingredients:

80 grams -- Chia seeds
480 grams -- Non dairy coconut milk
20 grams -- Maple syrup
10 grams -- Vanilla extract
2 grams -- Kosher salt

Instructions:

In a medium bowl, mix all the ingredients together until fully incorporated. Chill for at least 4 hours or overnight. Spoon into individual serving vessels. Top with fresh seasonal berries, preserves or a fruit compote. Garnish with sliced almonds. Breakfast preparation: Top with granola and seasonal berries.
